Apple Pie for Wife


This is my favourite apple pie.The base is a simple shortcrust dough - suitable for several other cakes as well...

  • 300 g plain flour
  • 200 g butter
  • 100 g caster sugar
  • 1 egg
  • 0,5 dl sour cream
  • 1/2 pack (6 g) baking powder
  • lemon zest
  • orange zest
  • 1 kg apple
  • vanilla sugar
  • cinnamon
  • grounded walnut (or bread crumbs)
  1. Preheat oven to 200 °C. Grease a cake tin (approx 20 x 30cm).
  2. In a bowl mix the flour, caster sugar and the baking powder, knead in the egg yolk, butter, lemon and orange zest to form the dough. Work as quickly as possible to prevent the dough becoming warm. Chill it in the fridge at least for one hour - during you can make the filling.
  3. Ground the apple and flavour it with the cinnamon and the vanilla sugar and mix with the walnut or bread crumb to take up the apple juice. 
  4. Divide the cold dough in two. On floured surface roll out the first part to reach the size fitting in the cake tin with a little edge. Prick pastry bottom all over with a fork and spread the filling on top of it. Cover it with the other rolled dough and egg-wash the top at least three times - in changing directions. Finally prick this all over as well.
  5. Bake the pie for 50-60 minutes in the preheated oven. 

Ez az én kedvenc almás pitém. A tésztája univerzális, egyszerű(bb) omlós tészta - sok más sütihez is ezt használom...

  • 300 g sima liszt
  • 200 g vaj (vagy margarin)
  • 100 g porcukor 
  • 1 egész tojás
  • 0,5 dl tejföl
  • 1/2 cs sütőpor
  • citromhéj
  • narancshéj 
  • 1 kg alma
  • vaníliás cukor
  • fajhéj
  • dió (vagy zsemlemorzsa)
  1. A sütőt melegítsük elő 200 °C-ra. Egy mély tepsit (kb. 20 x30 cm) kivajazunk.
  2. A lisztet összekeverjük a porcukorral és sütőporral, majd hozzágyúrjuk a vajat, a tojássárgát, citrom- és narancshéjat. Lehetőleg gyorsan dolgozzunk, hogy a vaj ne olvadjon meg a tésztában. Hűtőben pihentessük legalább egy órán keresztül - addig elkészítjük a tölteléket.
  3. Az almát lereszeljük, fahéjjal és vaníliás cukorral ízesítjük majd annyi zsemlemorzsát vagy diót adunk hozzá ami felszívja a levét.
  4. A pihentetett tésztát kétfelé osztjuk. Lisztezett felületen az egyiket akkorára nyújtjuk, hogy a tepsi aljára helyezve kicsi pereme maradjon. Villával sűrűn megszurkáljuk és rásimítjuk a tölteléket. A másik kinyújtott lappal lefedjük, a tetejét legalább háromszor - más-más irányban - megkenjük tojásfehérjével. Végül villával ezt is megszurkáljuk.
  5. Az előmelegített 200 °C-os sütőben 50-60 percig sütjük.

    Sour Cherry Sponge Cake

    I do not like sponge cake - I think it is dry. But there is a version - the butter sponge cake - which meets the high requirements of mine. When the sour cherries ripen we often bake this moist cake which is easy and quick to make and the children love it. Only need someone who can deal with the cherry pitting...
     
    Ingredients:
    • 300 g butter, softened  
    • 300 g caster sugar  
    • 6 eggs  
    • 270 g plain flour  
    • 1 1/2 teaspoons baking powder  
    • 1/2 teaspoon salt  
    • 1 lemon zest  
    • 750 g pitted sour cherry (the more the better) 
    Directions:
    1. Preheat oven to 180 °C. Grease and flour a big cake tin (approx 40 x 30cm) - or if you are a lazy one put baking paper in it.
    2. In bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Combine the flour, baking powder, salt and lemon zest then stir into the batter. Spread the batter evenly into the prepared tin and scatter the pitted sour cherry on the top of it.
    3. Bake for 35-40 minutes in the preheated oven (or until a skewer inserted into the centre comes out clean). Cool in tin on a wire rack.  
    Nem szeretem a piskótát - túl száraznak találom. Van azonban egy változata - a vajas piskóta - ami még az én elvárásaimnak is megfelel. Amikor érik a meggy, sokszor készítünk meggyes piskótát: egyszerű, gyors és a gyerekek nagyon szeretik. Csak legyen aki győzi magozni a meggyet...

    Hozzávalók:
    • 300 g puha vaj
    • 300 g porcukor
    • 6 egész tojás
    • 270 g sima liszt
    • 1 1/2 tk sütőpor
    • 1/2 tk só
    • 1 citrom reszelt héja
    • 750 g magozott meggy (minél több annál jobb)
    Elkészítés: 
    1. A sütőt melegítsük elő 180 °C-ra. Egy mély tepsit (kb. 40 x30 cm) kivajazunk - vagy a lustábbak sütőpapírt teríthetnek bele.
    2. Egy mély tálban a puha vajat és a cukrot habosra keverjük. A tojásokat egyenként hozzáverjük és tovább habosítjuk. Egy másik tálban összeszitáljuk a lisztet a sütőporral, sóval és a citrom héjával. Beleöntjük a vajas masszába és jól összekeverjük. Most már megy az egész massza az előkészített tepsibe és a megyet egyenletesen eloszlatjuk a tetején.
    3. Süssük 35-40 percig (vagy tűpróbáig). Tegyük rácsra és hagyjuk kihűlni a tepsiben.

    Szalagos Fánk


    I know the carnival (doughnut) season is over but we can not be filled up...

    Tudom, hogy hivatalosan vége van már a farsangi (fánk) szezonnak, de sajnos mi nem tudunk betelni vele...

    Melted Chocolate Cake Topping

     
    I have planned to share my favourite cake glaze with you for a long while and now this is the time! Perfect base for birthday cakes and we use it frequently.
    • 2 bars (~300 g or 10,6 oz) milk chocolate
    • 1 bar (~150 g or 5,3 oz) dark chocolate (with 65-85% cocoa solids)
    • 1 dl whipping cream (with 30–40% fat)
    Melt the chopped chocolate and the whipping cream over boiling water - as it stated in all the clever books - and stir. When the substance is even, glossy and homogeneous pull it from the steam and stir a while: let's admire our weaving cream! When the wonder is over, pour it on the middle of the waiting cake and smooth it with circling motions of a spoon. Let it to drip over the brim: this feature is my personal favourite - like a fairytale cake! I do not make the surface absolutely even, I love the waves of the chocolate!

    Régóta tervezem, hogy megosztom veletek kedvenc tortamázam készítésének fortélyát és most itt az idő! Tökéletes alap egy szülinapi tortához (például), mi meglehetősen gyakran használjuk.
    • 2 tábla (300 g) tejcsokoládé
    • 1 tábla (100-150 g) étcsokoládé
    • 1 dl habtejszín
    Az apróra tört csokoládét és a tejszínt vízgőz fölött kevergetve felmelegítjük - ahogyan az a nagykönyvben meg van írva. Amikor sima, fényes és homogén, levesszük a gőzről és kevergetjük még egy kicsit: gyönyörködünk benne milyen szépen fodrozódik. Mikor eleget néztük, rácsorgatjuk a várakozó torta közepére, majd egy kanállal körkörös mozdulatokkal kifelé haladva eloszlatjuk a csokit. A szélén hagyjuk, hogy lecsurogjon: nekem ez a kedvencem, olyan mesebeli torta hatása lesz! A tetejét sem szoktam nagyon simára lapogatni, szeretem a csoki-hullámokat!
